Residue on Ignition: NMT 0.1%
Procedure
Sample: 2 g of Tartaric Acid, previously dried, in a conical flask
Analysis: Dissolve the Sample in 40 mL of water, add phenolphthalein and titrate with 1 N sodium hydroxide VS. Each mL of 1 N sodium hydroxide is equivalent to 75.04 mg of C4H6O6
Acceptance criteria: 99.7% to 100.5%
Chloride and Sulfate, Sulfate:
Sample solution: 10 mL of a 1-in-100 solution of Tartaric Acid
Analysis: Add to the Sample solution 3 drops of hydrochloric acid and 1 mL of barium chloride.
Acceptance criteria: No turbidity is produced.
Optical Rotation, Specific Rotation: +12.0° to +13.0°
Loss on Drying: Dry over phosphorus pentoxide for 3 h: it loses NMT 0.5% of its weight.
Limit of Oxalate:
Sample solution: 10 mL of a 1-in-10 solution of Tartaric Acid
Analysis: Nearly neutralize the Sample solution with 6 N ammonium hydroxide, and add 10 mL of calcium sulfate.
Acceptance criteria: No turbidity is produced.
Packaging and Storage: Preserve in well-closed containers.

Solution S: Dissolve 5.0 g in distilled water and dilute to 50 ml with the same solvent.
Appearance of solution: Solution S is clear and not more intensely coloured than reference solution.

Oxalic acid: Maximum 350 ppm, calculated as anhydrous oxalic acid.

Tartaric Acid occurs as colorless or translucent crystals or as a white, fine to granular, crystalline powder. It is stable in air. One gram dissolves in 0.8 mL of water at 25C, in about 0.5 mL of boiling water, and in about 3 mL of alcohol. Its solutions are dextrorotatory.
Function: Acidifier; sequestrant; flavoring agent.REQUIREMENTS
Identification: A sample solution gives positive tests for Tartrate.
Assay: Not less than 99.7% and not more than 100.5% of C4H6O6 after drying.
Lead: Not more than 2 mg/kg.
Loss on Drying: Not more than 0.5%.

Procedure
Sample: 250 mg, previously dried at 150C for 3 h
Titrimetric system
Mode: Direct titration
Titrant: 0.1 N Perchloric acid VS (in glacial acetic acid)
Endpoint detection: Potentiometric
Analysis: Dissolve the Sample in 150 mL of glacial acetic acid by stirring and heating to near the boiling point. Cool to room temperature. Titrate with 0.1 N perchloric acid VS (in glacial acetic acid) to a potentiometric endpoint. Perform a blank determination and make any necessary adjustments. Each mL of 0.1 N perchloric acid is equivalent to 9.703 mg of sodium tartrate (C4H4Na2O6).
Acceptance criteria: 99.0% to 100.5% on the dried basis
Loss on Drying: Dry a sample at 150C for 3 h: it loses 14.0% to 17.0% of its weight.
Packaging and Storage: Preserve in a tight container. No storage requirements specified.

Sodium Tartrate occurs as transparent, colorless crystals. It is the disodium salt of L(+)-tartaric acid. One gram dissolves in 3 mL of water. It is insoluble in alcohol. The pH of a 1:20 aqueous solution is between 7 and 9. Upon ignition, it emits the odor of burning sugar and leaves a residue that is alkaline to litmus and that effervesces with acids.
Function: Sequestrant.REQUIREMENTS
